Breakfast Casserole

I don't know about ya'll, but I'm a sucker for breakfast foods! I could literally eat breakfast for well, breakfast, lunch, and dinner. I love that breakfast foods allow you to get in carbs, good fats, protein, and veggies, all in one dish.  Which is exactly what this breakfast casserole is perfect for!  
I generally make my own breakfast sausage to put in the casserole to keep it healthier, but you can always use regular Jimmy Dean or another pre-made breakfast sausage from the store.  To make your own turkey breakfast sausage, follow this recipe:

Turkey Breakfast Sausage Ingredients:
  • 3/4 lb (half of a reg. pkg.) of lean ground turkey
  • 1 tsp ground ginger
  • 1 tbsp ground sage (or more as desired)
  • 1 tsp course black pepper

Turkey Breakfast Sausage Directions:
  1. Mix all ingredients in bowl.
  2. In an oiled pan, cook the turkey sausage mixture until lightly browned.

REMEMBER: This recipe is just a guide.  You can always add more of your favorite veggies or other spices to the casserole to customize it to your favorite flavors.  It's also a great idea to use different kinds of cheese to sprinkle on top!

Breakfast Casserole Ingredients:
  • 8 eggs
  • 1 whole wheat english muffin (toasted) OR 1/2 semi-stale whole grain bagel
  • 3/4 cup cooked breakfast sausage
  • 1 handful spinach
  • 1/4 cup shredded cheddar or cheddar jack cheese

Breakfast Casserole Directions:

  1. Preheat oven to 400 degrees
  2. Grease glass casserole dish with coconut or olive oil.
  3. Cook breakfast sausage until lightly browned, while toasting english muffin.
  4. Tear english muffin or semi-stale bagel into pieces and throw into dish, evenly spread throughout.
  5. Pour breakfast sausage over bread, evenly spread throughout.
  6. Tear spinach into pieces and spread evenly over bread and sausage.
  7. Whisk eggs. Pour eggs over everything in dish.  Make sure the eggs cover every part of the dish.
  8. Sprinkly cheese over everything.
  9. Cook in over for 15 minutes, or until top is slightly browned.
