Now that's one tasty and healthy lunch! Pan fried Tilapia & Mediterranean orzo salad . Both are so quick and easy to make, and even better, you can make a big batch of orzo salad ahead of time and be set for a week.
For the tilapia (try to stay ahead from farm raised, get wild): add 1 tsp coconut oil to pan with 1 tsp garlic and red pepper flakes. Once melted, add the fish, sprinkle some sweet paprika and lemon juice; flip until done and wahlah!
For the Mediterranean orzo salad: cook 1/2 lb orzo and let cool. While orzo is cooking, cut grape tomatoes in half. Once orzo is cooled, add desired amount of tomatoes, olives, feta (optional), spinach, black pepper, 1 tbsp lemon juice, 2 tbsp olive oil.
In my humble opinion, sweat and a smile are the sexiest things a person can wear.
